RUSTICO COOKING CLASSES NYC: PERFECT RAVIOLI & MORE

Hands-On Cooking Classes in NYC

If you love fresh pasta and want to learn to make ravioli from scratch, or if you adore braised beef short ribs and risotto, don't miss our class on authentic Milanese cooking October 1 at 12PM!

In this brand new class, we'll begin by making pasta the old-fashioned way, with eggs and flour, roll it out, stuff it with a beguiling combination of roasted butternut squash and Parmigiano, and shape it into plump ravioli. We'll slow-cook hearty beef short ribs with plenty of red wine until they become meltingly tender and juicy, and serve them with roasted cauliflower topped with cheese and bacon, and Milan's beloved saffron-scented risotto. Dessert draws on the old Italian saying, Al contadino non far sapere quant'e' buono il cacio con le pere ("Don't tell the farmer how good cheese is with pears"): we'll serve wine-poached, juicy pears with ripe, creamy Gorgonzola: we'll poach the pears in a red wine syrup, and whip our Gorgonzola into a luscious mousse with a touch of honey.

On the menu:

  • Butternut Squash Ravioli in Sage-Infused Butter
  • Braised Beef Short Ribs with Caramelized Onions & Red Wine
  • Cauliflower Gratin with Smoked Mozzarella & Bacon
  • Saffron Risotto alla Milanese
  • Wine-Poached Pears with Gorgonzola-Honey Mousse

This hands-on class lasts from 12PM to 3PM. The cost is $110 per person and includes a full lunch paired with 3 wines. Be sure to sign up here before class sells out or call 917-602-1519.
