Happy Spring! This week, recipes include a tasty braised cabbage with bacon, Irish soda bread, delicious slow cooker chicken with chipotle sauce, butternut squash cupcakes, and more.

Sausage and Potato Soup With Kale
Use sweet Italian sausage or other fresh pork sausage in this flavorful potato soup. Feel free to use chopped chard leaves or spinach in this soup in place of the kale if that's what you have on hand. Serve this thick and hearty soup with crusty bread or rolls for a fabulous everyday family meal.

Cabbage With Leeks and Bacon
This cabbage and bacon combination is a tasty dish, and it makes an excellent side dish with ham, roast beef, or corned beef. This cabbage dish is quick and easy to prepare, has just five ingredients, and it cooks very quickly.

Sausage and Potato Coddle
This classic Shepherd's Pie, made with ground lamb and mashed potatoes, is a tasty version of a classic casserole. Serve with crusty rolls or bread and tossed salad for a hearty, delicious meal.

Irish Soda Bread
This delicious Irish soda bread is simple to prepare and bake, and it's a great bread to serve with any meal. It's especially good with a hearty stew or bean recipe. Or, use this bread in place of biscuits for breakfast. Drop an egg on top of a toasted slice of soda bread or serve with sausage gravy.
