This week, try recipes for a light summer squash "pasta," a super flavorful onion jam, great tasting chicken burgers, a special pork rib roast, chicken gumbo, sausage gravy, and more.

Summer Squash "Pasta" With Garlic and Basil
This delicious vegetable "pasta" is easily made with a julienne peeler, then it's sauteed just until it's slightly tender. Top the squash pasta simply with a little Parmesan cheese or serve with a little marinara and mozzarella. This is especially good for a low carb diet, or make it for a simple, lighter meal.

Chicken Burgers
These burgers are made with boneless chicken thighs, along with garlic and seasonings. Serve these moist, well seasoned chicken burgers with sliced tomatoes, pickles, and lettuce, along with a spicy sriracha mayonnaise or chipotle mayonnaise.

Balsamic Onion Jam
This is one of my favorite burger toppings, and it's a great condiment to serve along with grilled steaks, a beef or pork roast, or just about any main dish. It's the perfect topping for milder turkey or chicken burgers.

Pork Rib Roast With Madeira Sauce
A nicely seasoned Madeira wine sauce helps to flavor this great tasting pork roast, along with a rub of sea salt, herbs, and garlic. Serve this roast sliced with the Madeira sauce, mashed or baked potatoes, and a green salad or cooked greens.
