 This week I've been doing a lot of frying, working on a recipe for fritters for when my mom visits. She loves corn fritters, so I made two kinds, one with cream-style corn and the other with kernel corn and bacon. Both are delicious. Also this week, baked potato  skins, wonderful spicy peanut chicken wings, a peach cobbler, grilled eggplant, and chocolate chip banana bread. 

How to Make Quick Corn Fritters
Quick Corn FrittersIf you're looking for a special breakfast treat or snack to prepare, corn fritters should be on your list. They are wonderful little bites, and absolutely delicious with maple syrup, cane syrup, or just a dusting of powdered sugar. They take less than 20 minutes (not counting the time to get the oil up to temperature). Here's how to make them.
