We've just returned from a week-long trip to Liguria, Italy, full of new recipes and ideas for classes... We can't wait to share some of our recent discoveries with you in the coming months. One of the best things we ate (and ate, and ate again!!) was focaccia: simple, flavored only with olive oil and sea salt, and baked to soft-on-the-inside, crispy-on-the-outside perfection. We'll teach you how to make the dough for this amazing Italian flatbread (as well as a variety of other delicious savory and sweet baked goods) in our upcoming Essentials of Italian Baking cooking class on June 14 at noon. If you'd rather learn how to make fresh pasta from scratch, we have a class on June 7 at noon for pasta novices; an amazing southern Italian cooking class on June 20; our ever-popular Ten Best Pasta Sauces class on July 11; and much more. Classes last 3 hours and are hands-on; you'll learn to prepare an entire menu, then enjoy a full meal with wine. Join us for a memorable taste of Italy, right here in NYC!

JUNE 7 AT 12PM: FRESH PASTA FOR BEGINNERS

This class was designed for anyone who wants to learn to make fresh pasta from scratch. You'll begin by kneading your very own egg pasta (the ratio is simple and foolproof), then roll out the dough into silky tagliatelle and plump ravioli. We'll also learn to make two fabulous sauces and fresh biscotti in our Fresh Pasta for Beginners cooking class.
