From Diana Rattray, your Guide to Southern Food

This week I've been doing a lot of frying, working on a recipe for fritters for when my mom visits. She loves corn fritters, so I made two kinds, one with cream-style corn and the other with kernel corn and bacon. Both are delicious. Also this week, baked potato  skins, wonderful spicy peanut chicken wings, a peach cobbler, grilled eggplant, and chocolate chip banana bread.

How to Make Quick Corn Fritters
Quick Corn FrittersIf you're looking for a special breakfast treat or snack to prepare, corn fritters should be on your list. They are wonderful little bites, and absolutely delicious with maple syrup, cane syrup, or just a dusting of powdered sugar. They take less than 20 minutes (not counting the time to get the oil up to temperature). Here's how to make them.

Spicy Peanut Chicken Wings
Spicy Peanut Chicken Wings These juicy, delicious chicken wings are tossed with a spicy peanut sauce, then they're served with more sauce on the side for dipping. Use a spicy chili garlic paste or chili paste in these wings, such as a sambal, and feel free to adjust the amount if you like more or less heat.

Sticky Spicy Maple Glazed Ribs
Spicy Maple Glazed Ribs These ribs are nicely seasoned with a variety of basic pantry spices, then they're baked to perfection with a simple maple glaze.

If you're looking for an alternative to ribs in a heavy barbecue sauce, this recipe is an excellent choice. You probably have all the spices in your pantry. All you need is the ribs and a little time for the slow baking.
