Pasta Salad With Chicken and Bacon
Bacon adds a delicious, smoky flavor to this pasta salad, along with diced tomatoes, celery, and onion. I used mini penne pasta in this recipe, but macaroni or similar pasta... Read more

Chicken and Rice Casserole
This chicken and rice casserole is a meal in one dish, perfect for the family, or take it along to a dinner or potluck event. Serve this chicken casserole with a tossed salad or sliced tomatoes and warm rolls or biscuits for a fabulous busy day meal. I poached chicken breasts in a little chicken broth, but you could also use a rotisserie chicken to make this even quicker.

Strawberry Rhubarb Fool
This delicious dessert is made with a fresh rhubarb sauce, sliced strawberries, and sweetened whipped cream. If you're watching calories and fat, try this dessert with low-fat whipped topping or vanilla yogurt in place of the whipped cream.

Chipotle Mayonnaise
Use this flavorful spicy chipotle mayonnaise as a dip for chicken or fish or as a sandwich or burger spread. It's quick and easy to prepare with a few chipotle chiles in adobo sauce, mayonnaise, and other ingredients and seasonings.

Cheddar Rice Bake
This easy Cheddar cheese and rice casserole is made with a basic white sauce with onion and Cheddar cheese, baked with rice and a bread crumb topping. Serve this flavorful baked rice dish with just about any meat, fish, or poultry.

Rhubarb Crumble Pie
This rhubarb pie is topped with a buttery spiced oat crumb mixture. Serve with a scoop of ice cream for a perfect spring or summer dessert.

Chicken, Kale, and Pasta Bake With Cheese
I used chopped cooked kale in this casserole, but chard or spinach could also be used. It's a hearty dish, perfect to serve a family any day of the week, or make it for a potluck or large gathering. Casarecce pasta is a slightly twisted, open, tubular shape which holds sauce very well. It worked beautifully in this casserole, and I think it would be great in a creamy macaroni and cheese dish as well. Feel free to use fusilli, campanelle, macaroni, penne, or similar pasta in this dish.

Pork Cutlets With Mushroom Sauce
These delicious fried pork cutlets have a crispy coating and a savory, delicious mushroom sauce. These are great with roasted or mashed potatoes and your favorite vegetables. I used pork loin cutlets, but very thin boneless chops or pork tenderloin could also be used. Cut a 1-pound tenderloin into 1/2- to 1-inch slices and flatten each slice to make a thin cutlet.

this young girl faces a 56-year prison sentence and in this challenge, she found her purpose

She's just a child and this sucks.

There's a family in Canada who
have a young daughter with some mental challenges.
But she's the sweetest, kindest, most gentle child
you'll ever encounter.

The family had a fire once and
the conclusion of the fire inspection
pointed all fault on the young girl.

She didn't do it.

They repaired the home and another fire broke out.

Once again, the officials pointed the fault
on the child who wasn't even in the same location
as where the fire originated.

The authorities sought to remove
the child from the family as a "necessary means"...

The family was distraught.
But they stood by their daughter and fought back.

They won back temporary custody. Until...
You guessed it.
A third fire burned their home down again.

This time it's not even positive the little girl
was even in the home at the time.
But authorities chose once again
to fault the poor child.

Shamed and dejected, this 3x wrongly-accused
child is now blazing a trail
[pun intended for others being abused
by "the system" for wrongdoings they never committed].

but here's the thing...
are you ready for this...

This little girl could sit around
blaming the authorities and go down the path of
"If everyone thinks I am 'bad', I might as well be..."

(an attitude unfortunately too common
among those who experience similiar trials and tribulations)

Or she could "hate" her accusers - or
even resent her family -
for "letting this happen"

(of course, they didn't - they are fighting
every day - but remember,
this is often a victim's perception)

She could also easily become
depressed and turn to temporary solutions to
numb the pain she is feeling.

but she's not doing ANY of these things

She is writing her story.
She is sharing her story.
She is advocating for herself and others.
She is turning HER tragedy into triumph.

She says this happened to her
for a "bigger" reason...

(so wise beyond her years)

Because SHE has a voice that won't
be quieted - A voice she is now
using to help others in similar situations "fight back" -
if only in their hearts and minds...

She's wants to help others see that
holding a "victim mentality" simply means
YOU will continue to travel down those
painful roads often reserved for people
who have been victimized once...

And so get lost in their situation frequently resulting
in their getting victimized over and over again.

She is getting published because this
situation has changed her life and instead
of taking it lying down...

She is standing up for herself and
others who just can't.

She is a young girl.
She now has a wisdom and life path usually
reserved for those much older.
But not wiser.
She is wise.
Difficultly earned...
but greatly deserved.

If this child can get her story - have
the courage to get her story - "out there"...
So can you.
No more. excuses.
No "but(s)..." or
"I can't because(s)..."

Uncommon artworks.
Explore the world of folk and traditional art at the South Carolina State Museum in Columbia. Uncommon Folk features rarely exhibited items from the museum's collection, including Native American earthenware, turkey calls and decoys, shrimp nets, toys, wood carvings, whimsical whirligigs, and a flat-bottomed boat by Willie DeReef, the last of the Gullah boat makers. This remarkable exhibit runs through January 15, 2012.



History comes alive.
Take a journey into the past to meet five people whose ideas changed America. From June 17-23, the Chautauqua Festival will feature 20 interactive theater performances throughout Greater Greenville and downtown Spartanburg. Ask questions and stand witness as history is brought to life by nationally known interpreters performing as John Muir, Albert Einstein, Frances Perkins, W.E.B. DuBois and Mark Twain.



The Charleston Story.
Coming to Charleston for Spoleto? Then be sure to visit the Gibbes Museum of Art to experience The Charleston Story. The museum's permanent collection boasts more than 150 works of art illustrating the rich and vibrant history of the Lowcountry. The exhibition highlights significant people, places and periods from Charleston's beginning as a British colony to the culturally diverse and dynamic city we know today.

Gullah/Geechee traditions.
Immerse yourself in Gullah/Geechee cultural traditions handed down for generations at the Sweetgrass Festival in Mt. Pleasant, June 4. Activities include arts and crafts, African drumming, vocal performances, dance, storytelling, and basket-making demonstrations. And don't you dare miss the showcase of sweetgrass baskets!

Enjoy art along with nature's beauty at the South Carolina Festival of Flowers in Greenwood, June 4-29. A juried art exhibition, arts and crafts show, photography exhibition, bluegrass concert and theatre performances are just a few of the scheduled events.
