Corned Beef Strata
This Corned Beef and Spinach Strata is perfect for brunch or breakfast, and it's easy to prepare the night before. Just pop it in the oven in the morning, slice some fresh tomatoes and some fruit to accompany the casserole, pour the juice and coffee, and breakfast is served. Leftover corned beef is great in this casserole, but it would be good with ham or sausage as well.
