Recipe of the Day: Creamy Spinach and Parmesan Puff   Ingredients   • 2 large Eggs (Whole) • 1 cup Coconut Cream • 1/4 tsp Nutmeg (Ground) • 1 lb Spinach • 4 ozs Parmesan Cheese (Shredded)   Directions   1. Prepare a 1-quart souffle dish with a small amount of oil.   2. In a small bowl, whisk together the eggs, cream and nutmeg.  Add the spinach and cheese (leaving 1/4 cup for the top) mixing to combine.   3. Pour into the prepared dish, top with reserved cheese and bake at 350°F for 30 minutes until puffed and golden on top.  Serve immediately.
