The best place to warm up (at least for us food-loving people) is in the kitchen. It's not just the heat generated by the oven and stovetop that makes us feel warmer: it's the comfort of knowing there's food cooking, the anticipation of looking forward to a good meal, the nurturance we draw from eating. So in this, the coldest of all months, when we are bone-weary from the snow and chill, we hope you'll warm up with us in our kitchen. We have so many amazing classes lined up, but one we are very excited about is the brand new Cookbook Edition Ten Best Pasta Sauces Class on March 6 at 6 pm. This hands-on cooking class features 10 recipes from our newly released cookbook The Best Pasta Sauces: Favorite Regional Italian Recipes. You'll not only learn to prepare 10 delicious pasta sauces, you'll get to savor your creations with wine, and if you pre-order our cookbook, you'll receive a free red apron in class. NORTHERN ITALIAN COOKING CLASS MARCH 30

When we offered our Taste of Piedmont & Lombardy class in January, we had such a huge response that we've decided to run it a second time. In this class, you'll learn to make five traditional northern Italian dishes, from fresh pasta to dessert, and you'll learn many of the fundamental techniques of Italian cooking: Handling fresh pasta dough, shaping ravioli, roasting meat to perfection, making a red wine reduction, stirring creamy risotto, and more. On the menu:
  • Butternut Squash Ravioli in Sage Butter
  • Filet Mignon with Leek & Red Wine Sauce
  • Roasted Wild Mushroom Risotto
  • Cauliflower Gratin with Bacon & Smoked Mozzarella
  • Dark Chocolate Bread Pudding with Vanilla Whipped Cream & Rum-Caramel Sauce

DRESSING SALAD THE ITALIAN WAY

Whenever we serve salad at our cooking classes, invariably half (or more!) of the class participants ask what is in the dressing: "What did you put in the dressing?? It is so delicious and so light!" This is such a familiar question that we finally realized it was time to write about it. It is so very simple to make a good salad, but unfortunately most people don't know how.
