Cheddar Rice Bake This easy Cheddar cheese and rice casserole is made with a basic white sauce with onion and Cheddar cheese, baked with rice and a bread crumb topping. Serve this flavorful baked rice dish with just about any meat, fish, or poultry. Serve with a scoop of ice cream for a perfect spring or summer dessert. See More About:  rhubarb desserts  fruit pies  rhubarb pies Chicken, Kale, and Pasta Bake With Cheese I used chopped cooked kale in this casserole, but chard or spinach could also be used. It's a hearty dish, perfect to serve a family any day of the week, or make it for a potluck or large gathering. Casarecce pasta is a slightly twisted, open, tubular shape which holds sauce very well. It worked beautifully in this casserole, and I think it would be great in a creamy macaroni and cheese dish as well. Feel free to use fusilli, campanelle, macaroni, penne, or similar pasta in this dish. Pork Cutlets With Mushroom Sauce These delicious fried pork cutlets have a crispy coating and a savory, delicious mushroom sauce. These are great with roasted or mashed potatoes and your favorite vegetables. I used pork loin cutlets, but very thin boneless chops or pork tenderloin could also be used. Cut a 1-pound tenderloin into 1/2- to 1-inch slices and flatten each slice to make a thin cutlet.
