A Lighter Potato Salad
This potato salad is flavored with a little lemon juice, mustard, and olive oil for a tasty, nearly guilt-free replacement for the standard high-fat potato salad.

Tuna and Orzo Casserole
This tasty casserole is topped with fresh shredded Parmesan cheese before it's baked. Serve this casserole with a tossed salad and warm baked bread or rolls.

Southwestern-Style Burgers With Black Beans
These burgers are a snap to prepare with lean ground beef, a can of mild green chile peppers, and a can of black beans. Top these burgers with a slice of pepper jack cheese and add salsa or ketchup for a perfect burger.

Cheesy Mexican Appetizer
A Mexican-style appetizer recipe with bean dip, cheese, jalapeno peppers, chili sauce, guacamole, and tortilla chips. Feel free to use a little sour cream to garnish this appetizer.
