SOUTHERN ITALIAN COOKING CLASS SEPTEMBER 13 IN NYC

Southern Italian Cooking Class in NYC!

If you love focaccia, lasagna, and other southern Italian specialties, don't miss this one time-only hands-on class on September 13 at 6 pm!

Join us for a taste of Naples right here in Manhattan, a chance to explore the cuisine of this lively southern Italian city without getting on a plane. We'll begin our Neapolitan feast with a timeless classic: handmade focaccia topped fresh tomatoes and oregano, the perfect starting point for any Italian meal. Next up: fresh lasagna layered with cheese and a hearty sausage ragu; and while you can buy ready-made lasagna noodles if you are short on time, we'll make the pasta dough from scratch in this class, giving you the foundation to making fresh pasta confidently at home in the future. Our main course: shrimp poached in a lightly spicy broth with capers, parsley, and garlic, just delicious with a side of roasted broccoli with garlic and chili oil. A classic Neapolitan dessert featuring liqueur-soaked ladyfingers and a silky espresso custard closes the meal on a decadent sweet note.

Menu, September 13:

  • Focaccia with Olive Oil & Tomatoes
  • Neapolitan Three-Cheese & Meat Lasagna
  • Shrimp in "Crazy Water" (with Spicy Tomato-Garlic Broth)
  • Roasted Broccoli with Garlic
  • Silky Espresso Tiramisu over Drunken Ladyfingers

This week, recipes include delicious blueberry muffins, homemade onion rolls with caramelized onions, sauteed summer squash, a kale recipe, a quick relish, simple crostini, and more.

Perfect Blueberry Muffins
These blueberry muffins are a snap to prepare and bake, and they freeze beautifully. Make them in advance and have them ready to reheat for guests. Use fresh or frozen blueberries in these excellent muffins, and top with some cinnamon sugar if you like a little spice flavor.

Soft Onion Rolls
Caramelized sweet onions give these soft sandwich rolls fabulous flavor, and the sesame seed and dried onion topping gives them nice texture. These onion rolls are great for sandwiches or burgers, and the recipe makes a big batch. Use some now and freeze the rest for another day.

Easy Sautéed Summer Squash
This simple, flavorful summer squash sauté is a great way to enjoy fresh summer squash. This is a wonderful and easy side dish to serve with a grilled steak, fish, or chicken meal, along with rice, baked potato, or another side vegetable or salad. Feel free to use either yellow summer squash or zucchini in this easy recipe.

Sautéed Kale
Delicious, nutritious kale is sautéed to perfection with a little onion, red wine vinegar, hot peppers, and diced tomatoes. Try this flavorful kale dish with any family meal. Make the sautéed kale with cooked fresh or frozen kale.

This week, recipes include light and crunchy baked zucchini fries, grilled pork chops, tasty grilled turkey burgers with a little hoisin sauce, peach dumplings, pepper jelly, stuffed peppers, and more.

Baked Zucchini Fries
Grated Parmesan cheese and panko bread crumbs make these baked zucchini fries crispy and delicious. Use egg whites or egg substitute to keep the fat and calories to a minimum. These fries are a great alternative to French fries and they're great with sandwiches, burgers, or grilled steaks.

Grilled Pork Chops With Balsamic Marinade
These thick grilled chops get lots of flavor from the easy balsamic marinade. The simple marinade includes a little mustard, brown sugar, and rosemary for a nice balance of flavors.

Grilled Turkey Burgers
Ground turkey thighs keep these grilled burgers juicy, and the hoisin sauce gives them great flavor and nice char lines. If you can't get ground turkey thighs, use 85% to 90% ground turkey. These can be grilled outdoors or in a lightly oiled grill pan on the stovetop.

Jalapeno Pepper Jelly
A food processor makes the chopping quick and easy for this pepper jelly. Use red and green jalapeno peppers for a great taste and color. Jazz up your morning toast or bagel or use this jelly to top cream cheese and crackers.

A golden exhibit
If you're coming to Columbia for a Gamecocks football game or the South Carolina State Fair, plan to visit the South Carolina State Museum to see the new exhibit Tutankhamun: Return of the King. You'll view more than 100 stunning replicas of the original treasures of King Tut, including jewelry, golden shrines and King Tut's funerary mask. The exhibit will be there until March, but don't delay.



Southern plantation
Cooler days are ahead and it will be a perfect time to stroll the grounds of one of South Carolina's historic plantations – Redcliffe Plantation in Beech Island. A barn and two slave cabins are on the property along with the mansion. Admission to the plantation is free, you only pay for a tour of the house museum, built between 1857-1859. Learn more about this Southern plantation.



Arts & crafts celebration
Where can you find distinctive arts and crafts, live music, seafood and barbecue by the beach? At the Atalaya Arts & Crafts Festival in Murrells Inlet! The festival is Sept. 27-29 at Huntington Beach State Park. Juried art will be displayed throughout and around Atalaya, the Moorish-style winter home of Archer and Anna Huntington. Create your own masterpiece at the festival's Chalk Under the Oaks.
